Evaporators are used for concentration or crystallization of liquids. In most of the cases evaporators are used to increase the solid contents of the liquid product prior to drying. This is a cost effective method of removal of moisture. Depending on the number of effects used in an evaporator the quantity of water evaporated per kilogram of steam increases. In case of multiple effect evaporators, steam jet ejectors or thermo-compressors are used to increase the thermal efficiency.

There is also a type of shell and tube chiller where the water runs through the tubes and the refrigerant flows over the outside of the tubes within a closed shell. This is known as a flooded type. However, this arrangement is not as common as the dry type of construction. 

Multi Effect Evaporators are the equipment in which steam from an outside source is condensed in the heating element of first effect. The boiling temperature at which the first effect operates is high enough so that the evaporated water can serve as the heating medium for second effect. The vapors so formed are then sent to a condenser if it is a double effect evaporator.
